There's one vital word missing from these ingredients. The 16 oz. can of beans should be DRAINED!!!!

A friend of mine many years ago gave me this Bread recipe and it is yummy, with the same unique ingredients.

1 cup raisins
1 cup boiling water
3 eggs
1 cup oil
1 1lb. can of pork & beans
3 cups flour
1 tsp cinnamon
1/2 tsp. baking soda
1/2 tsp. salt

mix raisins with the water, stir and set aside
Beat eggs, oil, sugar, pork & beans until the beans are all broken. Add the flour and the rest of the dry ingredients with the bean mixture. Fold in the raisin mixture and add 1 cup of chopped nuts of your choice. (I like pecans the best, and I roast them before I add them) Add 1 tsp. of vanilla.
Pour into 3 greased loaf pans and bake at 325 for 50-60 minutes.

This bread is really moist and you would never guess that it is made with beans.

It makes great giant muffins too.

Enjoy!

Susan
